Instructions
Step 1
Preheat your oven to 400°F (200°C).
Step 2
Season the chicken breasts with salt and pepper on both sides.
Step 3
In a small bowl, mix 1/2 cup of the Parmesan cheese with the panko breadcrumbs.
Step 4
Dredge each chicken breast in the Parmesan-panko mixture, pressing it onto the chicken to coat evenly.
Step 5
Place the chicken in a baking dish and drizzle melted butter over each piece.
Step 6
Bake for 20-25 minutes or until the chicken is fully cooked and golden brown on top.
Step 7
While the chicken is baking, mix the mayonnaise, remaining 1/2 cup Parmesan cheese, and mozzarella cheese in a small bowl.
Step 8
Remove the chicken from the oven and spread the cheese mixture on top of each piece.
Step 9
Return to the oven and broil for 2-3 minutes until the cheese topping is bubbly and golden.
Step 10
Garnish with fresh parsley before serving.
