Instructions
Step 1
Cut the ribs into pieces and set aside.
Step 2
In a pot add oil and brown the garlic on all sides. Once browned, add the pork ribs and sear one side.
Step 3
Next add the soy sauce, oyster sauce, bay leaves and black pepper. Mix well, then add the vinegar and bring to a boil. Reduce to a simmer and put a lid on top.
Step 4
Cook until meat is tender, but not falling off the bone. The sauce should also look a little “dry” and the oil has separated from the sauce.
Step 5
Turn off the heat, and remove the meat and reserve to the side. Carefully drain off any excess oil in the pot while keeping the sauce in there.
Step 6
Mix together the water and cornstarch. Add the cola to the same pan and bring to a boil. Scrape off the fond on the sides and bottom of the pan. Reduce the liquid to half.
Step 7
Once the liquid is half, add the cornstarch slurry and cook until syrupy. Add the ribs back into the pot and coat with the cola syrup. Turn off the heat and serve warm.
