Ingredients

1kgpork belly strips
3 litreschicken stock
ginger
peeled and sliced
3garlic cloves
peeled and sliced
2star anise
rice wine vinegar
Glaze
salt
pepper
3 tablespoonshoney
3 tablespoonsketchup
3 tablespoonshoisin
3 tablespoonssoy sauce
3 tablespoonsbrown sugar
ginger

1red chilli
minced

Instructions
Step 1
Place the pork and everything listed above apart from the garnish and glaze into a large saucepan. Bring to a boil then lower the temperature right down and put a lid on it. Let it simmer for 2 hours
Step 2
After 2 hours, remove the pork from the water and dry it off completely with paper towel. You can discard the water or save it for stock for later.
Step 3
Cut the pork belly into small bites, approximately 2cm bites. Heat up your frying pan or wok with a splash of oil and place the pork in the pan
Step 4
You want each side to brown on all sides. This will require keeping an eye on it to make sure some sides down cook more than others.
Step 5
Once you're content with the browning add the glaze in the pan and let the sauce reduce to a sticky sauce. For me it took 15 mins on a medium low
Step 6
Garnish with the above and it's ready to serve. I served this with basmati rice, bok Choy, asparagus, broccoli but the world's your oyster. This would also be amazing in bao buns.
