Ingredients

5russet potatoes
medium, peeled and chopped into 2” pieces
2 x 14 ozcans chicken broth
reserving 1/2 c
1 x 10.5 ozcan cheddar cheese soup
0.5onion
med, chopped
2 chalf and half
4 Tbspbutter
¼ ccorn starch
½ csour cream
2 cshredded cheddar cheese
½ cgreen onions
chopped
salt
pepper
½ tspSmoked red pepper flakes
Bacon
chopped, optional
Instructions
Step 1
In crockpot , add chicken broth, cheddar cheese soup, potatoes, half-and-half, sour cream, butter, onion, salt, garlic, and pepper stir cook four hours on high or 6 hours on low. 30 minutes prior to serving mash the majority of the potatoes up with a potato masher. Take reserved chicken broth and mix in cornstarch until smooth. Add to crockpot. Stir shredded cheddar cheese into soup, continue to cook for 30 minutes. Stirring occasionally. Serve with extra shredded cheddar cheese, green onions and bacon pieces.
