Instructions

Step 1
1) Combine chicken pieces with marinade and leave it for 20 mins.
Step 2
2) Pan sear the chicken pieces with 2 tbsp EVOO in pan. Once golden, dish up and set aside.
Step 3
3) Using same pan, add in aromatics of onion, garlic, ginger and cilantro root. Stir in well and add lime zest & juice.
Step 4
4) Now add in homemade bone broth or store bought stock.
Step 5
Follow by coconut milk. Add in seasonings and stir in well.
Step 6
5) Bring to a simmer. Add in potatoes and cook covered for 5 mins.
Step 7
6) Finally add in the chicken pieces and continue to simmer till it thickens. Off heat and garnish.
Step 8
7) Serve up with steam rice or enjoy as is .
