Instructions
Step 1
Add the bouillon and water to the crockpot and stir together.
Step 2
Add potatoes, onion, garlic, carrots, celery, ham, and butter to the crockpot and stir again.
Step 3
Put lid on crockpot and cook on high for 4-6 or low for 6-8 hours until potatoes are tender.
Step 4
Use a potato masher to mash some of the potatoes.
Step 5
Make a cornstarch slurry with the 3 tbsp of cornstarch and cold water, and stir into crockpot.
Step 6
Add in the heavy cream, then the shredded cheese. Stir until thickened and cheese is melted.
Step 7
Season with salt, pepper, and parsley and stir.
Step 8
Serve with additional shredded cheddar cheese on top, and with crackers.
