 METHOD
 1.Preheat your oven to 180°C and line a tray with baking paper.
 2.Coat chicken breast in lemon and herb seasoning and marinate in the marinade for 30 min+.
 3.Place marinated chicken breast on the oven tray and bake for 20 minutes or until cooked.
 4. While the chicken is cooking, cook white rice according to the packet. 5.Finely slice capsicum, red onion, cucumber, and coriander and set aside.
 6.In a bowl add your cooked rice, marinated chicken, vegetables and top with lemon juice, kewpie mayo, and coriander.
