While the chicken is cooking, cook white rice according to the packet. 5.Finely slice capsicum, red onion, cucumber, and coriander and set aside. 6.In a bowl add your cooked rice, marinated chicken, vegetables and top with lemon juice, kewpie mayo, and coriander.
