Instructions
Step 1
Bring a pot of salted water to a boil and cook the spiralli pasta according to the packet instructions. Reserve about ½ cup of pasta water before draining.
Step 2
Heat a drizzle of olive oil or a knob of butter in a large skillet over medium heat.
Step 3
Add the chopped bacon and cook until crispy. Remove and set aside
Step 4
Add the diced chicken and cook until golden and fully cooked (about 8-10 minutes). Season with a pinch of salt and pepper. Remove and set aside.
Step 5
In the same pan, add the sliced leek and cook gently for 4-5 minutes until softened. Add the spring onions and cook for an additional 2 minutes.
Step 6
Return the chicken and bacon to the pan with the leek and spring onions.
Step 7
Stir in the crème fraîche and mix until well combined. If the sauce is too thick, add a splash of the reserved pasta water to loosen it. Simmer for 2-3 minutes.
Step 8
Add the cooked pasta to the skillet and toss everything together until the pasta is well coated in the sauce.
Step 9
Taste and adjust the seasoning with salt and pepper if needed.
Step 10
Serve immediately, optionally topped with grated cheese for extra flavor.
