Instructions

Step 1
boil water. while the water is boiling make the sauce
Step 2
put a good glug of olive oil in a pan on medium heat. add diced onion. sauté until golden brown and translucent
Step 3
once the onions are cooked add oregano and red pepper flakes, I don’t measure so just put as much as you’d like. Cook until fragrant, 1-2 minutes

add 2 WHOLE peeled cloves of garlic to pan
Step 5
add tomato paste. Cook for 2-3 minutes, until fragrant
Step 6
add vodka. Let it cook for 2-3 minutes
Step 7
add heavy cream. Simmer for 1-2 minutes and remove from heat
Step 8
cook pasta for 1 minute less than package says
Step 9
reserve pasta water in mug or pyrex
Step 10
add cooked pasta to sauce with a splash of pasta water
Step 11
add parmesan reggiano, as much as you’d like, about a cup
Step 12
add a splash of pasta water, stir it all together
Step 13
turn heat on medium-low until cheese melts
Step 14
enjoy!
