Instructions

Step 1
Preheat oven to 200°C/180°C fan/gas 6
Step 2
Make the carmelised onions: place onion and oil in a large ovenproof frying pan and cook over medium heat for 10-12 minutes, or until soft and starting to brown.

Add the stock and sprigs of sage and cook until the stock is simmering

Salt and pepper chicken thoroughly and set aside.

Combine the mustard and honey and spread over chicken, topping with the extra sage leaves.

Place the chicken atop the carmelised onions and bake 40-45 minutes or until the chicken is cooked through.
Step 7
Cut chicken into pieces and serve with the onions and pan sauce
