Step 1
Preheat oven to 350 F. Coat 9-inch skillet or cake pan with nonstick cooking spray.
Step 2
In a large bowl, whisk eggs through almond extract. Add almond flour, baking powder, baking soda and salt; whisk until smooth. Fold in spelt flour until no streaks of flour remain.
Step 3
Chop one pear into 1/2-inch pieces. Fold into batter until just combined, then pour batter into prepared skillet or pan.
Step 4
Cut remaining pear into 12-16 thin slices. Lay slices in pinwheel pattern overtop batter, then scatter with sliced almonds.
Step 5
Bake 25-35 minutes, or until toothpick inserted in center comes out clean. Let cool in skillet or pan 15 minutes. Dust with confectioners sugar and serve warm. Refrigerate any leftovers.
