Step 1
Turn the grill to high. Place the mushrooms on the baking tray, drizzle with the oil and season with a pinch of salt and plenty of black pepper. Grill for 3 minutes.

Put a slice of smoked salmon on each mushroom. Mix together the creme fraiche, mustard and lemon juice and spread over the salmon.
Step 3
Top with a handful of watercress, a poached egg, and a scattering of pine nuts.
