Instructions
Step 1
Cook the couscous in the water in a saucepan until water has all but been soaked up. Add into a bowl and mix through the pesto until fully combined.
Step 2
Meanwhile, in a frying pan over medium heat cook the mushrooms and garlic for about 6 minutes. Stir occasionally to stop mushrooms from burning and sticking to the pan.
Step 3
Add remaining veggies (except the rocket) to the pan and continue to cook for about 5 minutes, stirring occasionally. Turn off the heat and mix through the rocket until it wilts slightly.
Step 4
Add cooked veggies to the bowl of couscous and toss through until combined.
Step 5
Served topped with sliced chillies, if desired.
