Instructions
Step 1
Combine all ingredients and chill until really cold (preferably overnight to allow flavours to infuse). Add a splash of balsamic vinegar if desired. Can also add grated Parmesan at end.

Notes: 1. Works as a pasta sauce or salad. 2. I usually add chopped basil just before serving. 3. If serving as a salad then strain most of the liquid.
