Instructions
Step 1
Put the lentils into a pan with the vegetable stock. Bring to the boil, then cover and simmer for 10-15 minutes until the lentils are soft and all the liquid is absorbed. Check occasionally and skim off any froth. Meanwhile, heat the oil or butter in a frying pan, add the onion and fry until soft.
Step 2
Preheat the oven to 190°C/375°F/Gas Mark 5 and lightly grease a 23cm 9in) cake tin.
Step 3
Drain the lentils and the onion and put them into a mixing bowl. Add the other ingrediets and mix well. Press into the prepared tin using the back of a spoon.
Step 4
Oven bake for about 30 minutes. Allow to cool slightly, then cut into wedges.
Step 5
Serve warm or cold
