Instructions
Step 1
Peel and dice the sweet potatoes into small, uniform cubes.
Step 2
In a large non-stick skillet, heat the olive oil over medium heat (or use cooking spray for fewer calories).
Step 3
Add the diced sweet potatoes and cook, stirring occasionally, until they are tender and lightly browned (about 10-15 minutes).
Step 4
Add the chopped onion (or onion powder) and red bell pepper (or jarred red pepper slices) to the skillet.
Step 5
Cook until the vegetables are softened and slightly caramelized (about 5-7 minutes).
Step 6
Add the minced garlic and cook for another minute until fragrant.
Step 7
Sprinkle in the smoked paprika and cumin, stirring to evenly coat the sweet potatoes and vegetables.
Step 8
Season with salt and pepper to taste.
Step 9
Optional: Top with sliced avocado, a dash of hot sauce, or a poached egg for added flavor and nutrition.
