Spaghetti with Lentil Bolognese

Ingredients
4 servings

low calorie cooking spray

1onion
large, finely chopped

2carrots
peeled and diced

4celery sticks
finely chopped

4garlic cloves
finely chopped

400gcan chopped tomatoes

½ tspdried chilli flakes

4 Tbsptomato purée
2 x 400gcans green lentils in water
drained

200mlvegetable stock
boiling

salt

freshly ground black pepper

400gdried spaghetti

fresh oregano
roughly chopped
Instructions
Step 1
Spray a a large non-stick saucepan with low calorie cooking spray and place over a medium heat. Add the onion, carrots, celery and garlic and cook slowly for 10 minutes or until the vegetables soften and start to turn golden.
Step 2
Increase the heat to medium-high, add the tomatoes, chilli and tomato purée and stir-fry for 4-5 minutes. Stir in the lentils and stock and bring to the boil, then turn the heat to low, season to taste and simmer for 20-25 minutes or until the sauce has thickened.
Step 3
Meanwhile, cook the spaghetti according to the pack instructions and drain.
Step 4
Remove the bolognese from the heat and stir in most of the oregano. Divide the spaghetti between bowls, spoon over the bolognese and scatter over the remaining oregano to serve.
