Instructions
Step 1
Add onion and garlic to large stock pot with lid.
Step 2
Let onion and garlic pan fry for 1-2 minutes stirring occasionally.
Step 3
Add chicken broth, water, red pepper flakes and pork to the pot and deglaze the pot by scraping any burnt onion or garlic from the pan
Step 4
Boil on Medium for 2 hours or until meat is falling from the bone.
Step 5
Pull out ham hocks, separate meat from the bone. Chop meat and put it back in the pan. Discard bones, skin, and fat to your taste.
Step 6
Add cut collards to pot, making sure to cover them with broth.
Step 7
Place the lid and simmer on medium low for 1 - 2 hrs.
