Instructions

Marinate Fish

Step 1
In a shallow dish, mix lime zest & juice, coconut milk, olive oil, garlic, red pepper flakes, salt & pepper.
Step 2
Add fish fillets & coat evenly.
Step 3
Cover & refrigerate for at least 15–20 minutes to infuse flavours.

Make salsa

Step 4
In a bowl, combine avocado, tomatoes, onion, lime juice, salt, pepper & cilantro ( can use parsley + oregano)
Step 5
Gently toss until evenly mixed. Set aside to let the flavours meld.

Cook fish

Step 6
Heat a large skillet over medium heat.
Step 7
Remove fish fillets from marinade, letting any excess drip off.
Step 8
Cook for 3–4 minutes each side, or until opaque & easily flakes with a fork.

Serve

Step 9
Transfer fish to serving plates & top with a generous spoonful of salsa.
Step 10
Garnish with fresh cilantro & lime wedges for extra zest, if desired.
Step 11
Serve with corn chips
