Ingredients
4 servings
Shrimp Marinade
12 ozshrimp
de-veined and clean
oil
salt
pepper
1 tsppaprika
1 tspcumin
1 Tbscayenne pepper
1 tspadobo
Garlic
Diced
Pico Di Giallo
Instructions
Step 1
Clean and dry your shrimp thoroughly. Marinate the shrimp in chili powder, paprika, cumin, minced garlic, and salt and pepper to taste for 15 mins.
Step 2
Dice your tomatoes, red onions, jelepenos (optional), diced avocado and cilantro. Drizzle juice from on small lime and set aside.
Step 3
Heat 2 tbsp of olive oil in a large skillet over medium-high heat
Step 4
Cook the shrimp for 5-8 minutes until cooked through.
Step 5
Allow the shrimp to cool for before creating your lettuce wraps (just for a few moments, so the lettuce doesn't wilt)
Step 6
To make one serving, place two or three lettuce leaves on a plate. Top with some freshly chopped cilantro, avocado slices and pico di giallo mix. Enjoy!
