Step 1
Slice the halloumi into 2 cm thick slices and brush both sides with olive oil. Heat a grill pan over medium-high heat and place the halloumi on the grill. Cook for about 5 minutes on each side, or until the cheese is golden brown and crispy.
Step 2
Slice the panini bread in half lengthwise. Spread mayonnaise evenly on the inner sides of both halves.
Step 3
Layer the lettuce leaves and tomato slices on the bottom half of the bread. Add the grilled halloumi, then top it with thin slices of fresh avocado.
Step 4
Close the panini and place it back on the grill. Press gently and warm it up for 2–3 minutes per side, until the bread is lightly toasted and the panini is warm throughout.
Step 5
Remove from the grill, slice in half if desired, and serve immediately. Enjoy your creamy and flavorful halloumi and avocado panini!
