Instructions

Step 1
In a mixing bowl, whisk together the oat flour, Inspire Banana Whey Protein, baking powder, and cinnamon. In another bowl, beat the eggs, then add the mashed banana and almond milk. Mix until smooth. Pour the wet ingredients into the dry and stir until just combined. Let the batter sit for a few minutes—it'll get a little fluffy thanks to the baking powder. Heat a skillet over medium heat with a touch of coconut oil. Pour in batter to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden. Serve hot with a drizzle of honey or a dollop of your favorite nut butter.
