Roasted Pepper and Carrot Feta Dip

Instructions
Step 1

Preheat oven to 400° F.
Step 2

Slice off the top of the garlic, revealing the cloves. Cut the carrots into thirds and the peppers in half lengthwise.
Step 3

Drizzle with oil and salt.
Step 4

Roast in oven for 30 minutes or until the carrots are fork tender.
Step 5

Cover the peppers with foil for 10 minutes.
Step 6

Peel and discard the peppers skin.
Step 7

Add all ingredients into a blender and blend until smooth.
Step 8

Garnish with olive oil, parsley and more paprika.
Step 9

Serve with Naan or Pita Bread.
