room temperature, or substitute with 1 cup milk + 1 tbsp vinegar, let sit for 5 minutes

Step 1
Preheat your oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners or grease well.
Step 2
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Step 3
In another bowl, whisk the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs, buttermilk, and vanilla extract, and mix until smooth.
Step 4
Gradually fold the wet ingredients into the dry ingredients until just combined. Do not overmix—it's okay if the batter is slightly lumpy. Gently fold in the chocolate chips.
Step 5
Divide the batter evenly among the muffin cups, filling each to the top for a generous muffin top.
Step 6
Bake at 425°F (220°C) for 5 minutes, then reduce the oven temperature to 375°F (190°C) and bake for an additional 12-15 minutes or until a toothpick inserted into the center comes out clean.
Step 7
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
