Instructions
Step 1
In a large pan sauté the meat over medium-high until browned, about 5–7 minutes, ensuring you break it up into little pieces as it cooks. Use a slotted spoon to transfer sausage to a large bowl and set aside.


Step 2
Reduce heat to medium and sauté onion until softened, about 3 minutes.

Step 3
Add bell pepper and sauté onion until softened, about 3 more minutes. Use a slotted spoon to transfer onion and pepper to the bowl and set aside.

Step 4
Melt butter in pan and whisk eggs for scrambling. Once butter is melted, add eggs to pan and scramble until WELL done, then remove to bowl.


Step 5
(NOTE) Overcooking the scrambled eggs here is unfortunately pretty essential, otherwise the burrito will become very soggy when microwaved.
Step 6
Add cheese to bowl and mix everything thoroughly to combine. Line a baking sheet with foil/paper (solely for cleanup), spread the mix out, and refrigerate to cool.

Step 7
(NOTE) This step is semi-optional but makes a HUGE difference in the sogginess of the reheated burritos.
Step 8
Portion the mix out equally to 10 tortillas of your choice. Fold/roll and wrap each one in wax paper. Freeze the finished burritos.
Step 9
(NOTE) If intending to reheat in air fryer, use parchment paper or aluminum foil instead.
Step 10
To serve, microwave until reheated (60 seconds for one, 90 seconds for two).
Step 11
(NOTE) Alternatively, you can reheat these in an air fryer or pan. It will take much longer but generally avoids the sogginess of a microwaved burrito.
