Instructions
Step 1
Separate egg yolks
Step 2
Mix yolks with freshly grated cheese
Step 3
Fry guanciale until crispy, starting with a cold pan. Save the fat.
Step 4
After fat is cold mix with the yolk and cheese mixture
Step 5
Cook pasta in salt boiling water
Step 6
5 minutes before pasta is al dente, save some cooking pasta water and put it on feeezer.
Step 7
When pasta is done, transfer it to a skillet. Pour the cooking pasta water in the yolk, cheese mixture and mix it well, taking care not to cook the eggs.
Step 8
Pour the sauce on the skillet with pasta and mix until creamy. Add more water if necessary or heat it slowly if to liquid.
Step 9
Add seasoning as needed, serve and enjoy
