Baked feta chicken quinoa

Ingredients
6 servings
Baking chicken

1 cupfeta
preferably as a block

1 cupcherry tomatoes

1 cupsbroccoli

1 cupcarrots

1.5 lbsboneless chicken breast
2 tablespoonsfeta brine
or to taste

2 Tbsolive oil

1 tspsalt

½ tsppepper

2 tspgarlic powder
After Baking
Instructions
Step 1
In a baking pan, add all ingredients except for basil/spinach and quinoa, making sure the chicken is spaced. Drizzle oil, and add spices. Toss the ingredients to ensure everything is coated. In a separate pan, cook quinoa according to instructions on package.
Step 2
Bake at 400 degrees for 30, or until chicken is at least 160 degrees with an instant thermometer
Step 3
Remove chicken and mix in basil/spinach and cooked quinoa. Shred or slice chicken and reincorporate
Step 4
Add additional olive oil as desired

Server with a nice basil and tomato salad, or a green salad with topped feta and hemp seeds
