Instructions
Step 1
Combine melted coconut oil, cocoa powder, maple syrup and salt in a spouted measuring cup.
Step 2
Mash banana in a small bowl (leave it chunky) and fold in peanut butter. Do not over mix, you want swirls of both ingredients.
Step 3
Scoop the banana and peanut butter mixture into a 12 mini-muffin silicone pan (about 1 tbsp per muffin hole).
Step 4
Pour the coconut oil and cocoa mixture over the banana and peanut butter mixture, and sprinkle with shredded coconut.
Step 5
Place in the freezer for an hour until solidified, then transfer the minicups to a container and store in the freezer until ready to eat. Let the minicups rest at room temperature 5-10 min before eating.
