Instructions

Step 1
Heat 1/2 Tbsp oil in a large skillet over medium heat, add chicken, stirring to break up meat until crumbly and no longer pink. Using a slotted spoon, transfer chicken to a separate bowl.
Step 2
Add remaining oil, garlic, onion, green pepper and cumin. Cook, stirring often until onion is tender, about 7 minutes.
Step 3
Stirring in broth, tomatoes, and tomato paste and bring to a boil. Reduce heat and simmer for 15 minutes.
Step 4
Stirring in beans drained and simmer, stirring occasionally, until sauce is thick, about 10 minutes.
Step 5
Return chicken and any of is juices to pan and cook for 1 minute to heat through.
Step 6
Serve with chips and cheese if desired.
Step 7
All ingredients are no salt or low sodium.
