Cube the chuck roast

Boil water
Step 3
In sautée mode, add olive oil and onion. Then, add the garlic before adding the meat.

Brown the meat for 3-4 minutes per side, adding the salt and pepper during the process

Stop sautée mode, add tomato sauce and boiling water. Close the lid, turn knob to seal and cook on high pressure for 40 minutes

Meanwhile, peel and dice potatoes, and dice baby carrots
Step 7
After cooking time, add potatoes and carrots and adjust seasonings if needed. Cook on high pressure for an additional 7 minutes
Step 8
After cooking time, adjust seasoning. If sauce is too liquid, add corn starch slurry. Add chives and serve (over rice, or noodles)
