Salad Ingredients

2 ozmixed greens

1 ozromaine lettuce

0.5cucumber

0.5red bell pepper

½ cupfeta cheese
or goat

½ cupchickpeas
pre-cooked crispy, or croutons

red onions

2chicken fillets
grilled or breaded
Greek Vinaigrette
Instructions
Step 1
Cook the chicken fillet to your liking. While the chicken is cooking, prepare the rest of your ingredients by chopping the cucumber, red pepper, and red onions.




Step 2
Whisk all ingredients together in a bowl (or shake together in a mason jar) until combined. Use immediately or refrigerate in a sealed container for up to 3 days.







Step 3
Once the chicken is cooked, chop into small, bite-sized pieces. Combine all ingredients in a large salad bowl, drizzle evenly with the vinaigrette, and toss until evenly combined.




Step 4
Serve immediately, topped with extra feta cheese and black pepper if desired.
