Air fryer cheese and spiced onion stuffed potato bombs.

Delicious and golden potato bombs with very tasty and stringy cheese and spiced onion filling. Enjoy! You can prep a large batch and oven bake it at 220C until golden (about 30 mins). You can also freeze them raw, then air fry or bake from frozen.

Instructions

Step 1
Place the potato cubes in a pan of boiling water and cook until soft enough to mash (about 10 to 12 min, will vary with cube size and potato type)

While the potatoes are cooking add 2 tsp rapeseed oil to a frying pan, add the sliced onions, turmeric, paprika and msg (optional) and fry them until soft and slightly golden. Season to taste with salt and toasted black pepper, and put to the side to cool off.

Once potatoes are cooked, drain well and mash them thoroughly so there are no lumps left.

Step 4
Add the beaten egg, corn starch, parsley and garlic powder, and mix well with a spatula until you have a smooth but dry paste. Season to taste with salt an black pepper.

Step 5
Split the potato paste into 4 equal parts, oil your hands, make 4 potato balls and flatten them to make patties about 1cm thick with them pat the sides to tidy them up.
Step 6
Separate a couple of tbs of the fried onions for garnish.
Step 7
Put one of the paties in 1 hand, put half of the remaining onions on it’s centre, put half of the mozzarella on top, cover with another patty, press a little to remove any air, join and smoot hup the sides with your other hand. First bomb done.
Step 8
Repeat the process for the second potato bomb.
Step 9
Place them in the air fryer over a square of parchment paper, spray some oil over them and bake them at 200C until golden (about 10 min).
Step 10
Flip the bombs, remove the parchment paper and spray some oil. Bake at 200C until golden (about 5 minutes). When they’re almost ready, warm up the spiced onions you kept from garnish.
Step 11
Once golden, plate them, garnish with the spiced onions and one or two parsley leaves, and serve. Enjoy!
