Ingredients
4 servings

vinaigrette

1 teaspoonorange zest

2oranges
medium, for 2/3 cup of fresh orange juice

2 tablespoonsred wine vinegar

⅓ cupolive oil

1 teaspoondried thyme

½ teaspoonground ginger

½ teaspoonsalt
plus more to taste

½ teaspoonground black pepper
plus more to taste

5 cupsbaby kale
if using regular kale, remove ribs and massage to soften kale

1mango
sliced

1 ½ cupsshredded carrots

½ cuppumpkin seeds

1 bagBlack Pepper

2 Tbspgarlic herb cream cheese
or more if you wish
Instructions
Step 1
1) Grate one of the oranges to get the the orange zest.
Step 2
2) Slice and juice two to three oranges to get 2/3 cup of fresh orange juice
Step 3
3) Combine all vinaigrette ingredients, stir well
Step 4
4) Combine all salad ingredients, then add desired amount of vinaigrette and toss.
