Instructions

Step 1
Soak the douchi in the bourbon for 2 hours
Step 2
Chop the garlic and ginger into small chunks. Smash lightly with mortar and pestle.
Step 3
Toast chili flakes in dry pan 5-7 minutes. Remove and cool. Crush the chili flakes in the mortar if not already crushed.
Step 4
Toast sesame seeds in dry pan until you can hear them crackle. Remove and allow to cool. Then lightly smash in mortar to crack the seeds.
Step 5
Heat peanut oil in the pan.
Step 6
Add the garlic and ginger chunks ro the oil in the pan. Simmer for 2-3 minutes. Then remove the garlic and ginger chunks from the oil.
Step 7
Add the douchi and the soaking bourbon into the pan. Do this very slowly and carefully because the mixture will cause a lot of popping and hissing. Cook for 5 minutes.
Step 8
Mix in the crushed chili flakes and sesame seeds to the pan. Cook for a few minutes.
Step 9
Turn off the heat and allow the mixture to cool.
