Mojo Sauce ingredients

0.25 Corange juice

1juice of lime

2 Tbspolive oil

0.25red onion

4cloves garlic

2 Tbspfresh mint leaves

2 tspfresh oregano leaves

1 tspsea salt

Instructions
Step 1
Blend the Mojo Sauce ingredients together until smooth. Pour half the sauce over the chicken thighs and reserve the rest for topping. Let the chicken marinade for 30 minutes to overnight.
Step 2
Cook the rice according to package instructions.
Step 3
If desired, heat the beans by covering in water and bringing to a simmer.
Step 4
Assemble bowls evenly (rice, chicken, beans, onion, mango, avocado, cilantro, squeeze of lime, and mojo sauce!).
