Instant Pot Tuscany Chicken Drumsticks & Pasta

This was so easy to make and SO good!!!!! It's literally just 15m in an instant pot with chicken drumsticks, sliced red onion, garlic cloves, diced canned tomato, thyme, balsamic, honey, olive oil and lemon zest. Some red pepper flakes thrown in and this recipe is πŸ”₯πŸ”₯πŸ”₯. I combined it with rotini tossed in a garlicky lemony sauce which was super easy to make too 🀌 this recipe is meant for a smaller instant pot, feel free to go nuts and double the recipe if you have a big one ✌️

Instructions

Step 1
Heat some olive oil in instant pot. sear chicken drumsticks til golden brown on all sides, remove and set aside
Step 2
Saute red onions and garlic in the pot til starting to look golden
Step 3
Add water, deglaze, then add chicken back in. Add all other ingredients that were listed for just the chicken.
Step 4
Evenly distribute ingredients in the pot. cook on high pressure 15 min, natural release 5 min, then quick release.
Step 5
While instant pot is heating up, boil water and cook pasta to al dente. Set aside all ingredients listed for pasta
Step 6
Save 1/4 cup pasta water for the sauce and set aside
Step 7
Heat olive oil in a large skillet on medium low, just enough to saute garlic and red pepper til fragrant.
Step 8
Add lemon juice, lemon zest, pasta water, pepper, grated parm, butter, garlic powder, stir on low heat
Step 9
Add spinach leaves, stir around til spinach has wilted, then toss it all with the pasta
Step 10
Make bowls with a bed of pasta and lay 2 drumsticks on top with some of the stewed tomatoes, garlic, and onion
