Instructions

Step 1
Put your molds on sheet pans and freeze.
Step 2
Make the unflavored gelatin. Whisk together 28g unflavored gelatin with 112g cold water or juice in a small bowl. Stir until it reaches the consistency of applesauce. Leave the spoon in and put it in the fridge to set.
Step 3
In a small bowl, combine 1g potassium sorbate with a squeeze of lemon juice,1/4 teaspoon citric acid and 10 drops of flavor oils.
Step 4
Make a bain-marie. Measure 52g oil and 3g lecithin powder in large pyrex or small bowl. Place the pyrex/bowl in a medium pot with small amount of water in the bottom, making sure the bottom of the bowl touches the water but not the bottom of the pan.
Step 5
Chop up the cold gelatin from the fridge into cubes and add to oil mixture. Add 1/4 cup corn syrup. Add 58g boiling water and 112g flavored gelatin and whisk for ~8 minutes, being careful not to scrape the whisk on the edge of the bowl too much as this can break down the gelatin.
Step 6
After whisking for 8 minutes, add the lemon mixture and food coloring if using and whisk until dissolved, 1-2 minutes.
Step 7
Turn off the heat and using a funnel, pour the mixture into a squeeze bottle. Carefully fill your molds using a towel to hold the hot bottle. Place molds in the fridge to set. After a few hours, pop them out of the molds, place on a cooling rack and return to fridge to dry out overnight before putting in a container. Should be room temp stable, but you can extend their life by keeping them in the fridge.
