Halloumi salad

INGREDIENTS ▪️300g halloumi, cubed ▪️2 tbsp hot honey ▪️1 tsp chilli flakes ▪️570g chickpeas ▪️1 tsp paprika ▪️1/2 cucumber, finely chopped ▪️3 beef tomatoes, finely chopped ▪️1/2 red onion, finely chopped ▪️1 yellow pepper, finely chopped ▪️Large handful of coriander, finely chopped Cus cus Dressing ▪️Juice of 1 lemon ▪️1 tbsp honey ▪️2 tbsp extra virgin olive oil ▪️Salt and pepper to taste METHOD ▪️Over medium heat some oil in a pan. Once hot, add halloumi, hot honey and chilli flakes. Cook until golden brown, around 5 minutes. Cool cus cus ▪️Preheat oven to 200c. Rinse and drain chickpeas. Pat dry. Add to a prepared baking tray along with some oil, salt and paprika. Roast for 30 minutes until crispy. ▪️Make dressing by mixing ingredients together in a small bowl. ▪️Chop your salad and coriander, and add to a large bowl, along with the halloumi and chickpeas. ▪️Pour over dressing and mix well.
