Ingredients

8 ozmushrooms
sliced
3 Tbspwhite wine
4 OZhaloumi cheese
cut into 1/2 inch cubes
¼ cupflour
1egg
½ cupseasoned breadcrumbs
oil for frying
1 headromaine lettuce
finely chopped
2plum tomatoes
diced
1red onion
finely diced
2 TBSPwalnuts
chopped, toasted
½ cupmayonaisse
1 ½ cuplemon juice
2 Tbspwater
2garlic cloves
minced
¼ tspfresh dill
½ tspsalt
⅛ tspnutmeg

Instructions
Step 1
Add mushrooms and white wine to a sauté pan or skillet.
Step 2
Cook over medium-low heat until liquid has evaporated and mushrooms are soft, 8-10 minutes.

Set aside.

Prepare the haloumi cubes: Place flour, egg, and breadcrumbs in 3 shallow bowls.

Toss cheese cubes in flour (you can toss all of them at once), then dredge in egg and coat in breadcrumbs.

Heat oil in a skillet over high heat .

Add haloumi cubes; fry until golden and crisp on all sides.

Transfer to paper towel-lined plate to drain.

Prepare the dressing: In a small bowl or jar, whisk together mayonnaise, lemon juice, water, garlic, dill, salt, nutmeg, and pepper.

In a large bowl, combine lettuce, mushrooms, tomatoes, and red onion.

Top with haloumi cubes and walnuts.
Step 12
Toss with dressing before serving.
