Instructions
Step 1
Preheat oven to 350
Step 2
Season short ribs generously on all sides with salt and pepper then sear in a Dutch oven with neutral flavored oil until each side has a nice color

Remove short ribs and add diced carrots celery and onion. Cook for 5 minutes until translucent
Step 4
Add tomato paste and cook until lightly toasted, pour in wine bring to a boil and reduce slightly
Step 5
Add short ribs back in along with garlic herbs and enough broth to cover
Step 6
Bring to boil transfer to oven for 2 hours or simmer on stove for 2.5 hours
Step 7
Remove ribs and strain veg and herbs
Step 8
Bring to a boil and reduce and thicken. Add 1 tbsp of butter
