Instructions

Make the Chashu Pork (Prepare Ahead)

Step 1
In a saucepan, combine soy sauce, sake, mirin, sugar, water, garlic, and ginger. Bring to a simmer.
Step 2
Add the rolled pork belly and simmer for 1.5 to 2 hours, turning occasionally.
Step 3
Remove the pork, let it cool, then slice into thin rounds. Reserve the braising liquid for flavoring the broth.

Prepare the Broth

Heat vegetable oil in a large pot and sauté onion, garlic, and ginger until fragrant.

Pour in the chicken stock and dashi, then add soy sauce, mirin, sake, sugar, and salt.

Simmer for 30 minutes, then strain out solids. Adjust seasoning if needed.

Cook the Ramen Noodles

Step 7
Boil water in a separate pot and cook the ramen noodles according to the package instructions.

Drain and set aside.

Assemble the Ramen

Divide the cooked noodles into 5 bowls.

Ladle the hot broth over the noodles.

Top with sliced chashu, a soft-boiled egg (halved), menma, green onions, and nori.
