Instructions

Broth Method

Step 1
In deep stock pot add pork bones and pork trotters. Add water into pot until bones are submerged and bring to a boil to blanch bones
Step 2
As water begins to boil use skim scum from top of the water. Once impurities are removed, strain bones in sink and wash bones with cold water
Step 3
Place bones and trotters back into pot and add onion, shallots, scallions, ginger, and garlic. Cover with water and bring to a boil
Step 4
Boil stock for 12 hours and occasionally add water as needed. Strain liquid from solids after completed

Chashu Pork

Step 5
In a deep pot add pork belly, green onion, ginger, garlic, soy sauce, mirin, and sake. Add water to cover pork belly and bring to boil
Step 6
Place lid on pot with a slight crack to let steam out. Boil fo 2-3 hours. Occasionally check pork to flip/rotate pieces of pork and add water if necessary

Tare

Step 7
Combine dashi broth, soy sauce, mirin, sake, and salt

Dashi Broth

Step 8
In pot, add kombu and water bringing to a gentle simmer (do not boil) to 10-15 minutes. After water turns golden color remove kombu from pot
Step 9
After kombu is removed, add bonito flakes, dried anchovies, and shiitakes. Bring pot to a boil for 10 minutes.
Step 10
Strain liquid and discard solids

Ramen Assembly

Step 11
Add desired amount of tare to ramen bowl
Step 12
Add desired amount of tonkotsu broth

Add cooked ramen noodles
Step 14
Add desired toppings
