Creamy Chicken Orzo Recipe

This creamy lemon chicken orzo pasta is what I make when I can’t decide between chicken soup, pasta or risotto. With a few freezer staples, leftover cooked chicken, a cup or two of orzo pasta (aka risoni), plus a touch of cream and umami-boosting Parmesan, you have the most comforting yet nutritious meal in 30 minutes.

4 servings

½ cupfrozen baby peas

½ cupfrozen spinach
1 frozen ball or equivalent amount

1 tablespoonbutter

1 tablespoonolive oil

½ cuponion
large, finely diced, chopped

½ cupcarrot
small, finely diced

½ cupcelery rib
finely diced

½ teaspoonsalt

2 clovesgarlic
large, finely diced or minced

0.5lemon
Zest of
1chicken breast rotisserie
or roast chicken, cooked and diced

4 sprigsfresh thyme

½ tspdried thyme

⅓ cupwhite wine

1 ½ cupsorzo
or risoni, uncooked

½ tspblack pepper

3 ¼ cupschicken stock

2 tablespoonslemon juice
you can add more if you like it more lemony

1 cupgrated Parmesan cheese
loosely packed

¼ cupheavy cream
optional, I used it but can be without

Basil
or parsley to garnish
