Step 1
1. Heat a large saucepan over medium heat and add a splash of oil. Sauté onion until soft (3-5 min).

2. Stir in garlic, ginger, and chopped cilantro stems. Cook for 1-2 min, then add curry powder.

3. Rinse red lentils and add them to the pan with coconut milk, broth, and water. Stir to combine.

4. Bring to a boil, then lower the heat and simmer for 18-20 min, stirring occasionally.
