Chicken & Marinade

2 lbchicken thigh
bone in, skin on

6garlic cloves
minced

1yellow onion
large

2 cupsoy sauce

2 cupwhite vinegar

3dried bay leaves

1 Tbspwhole black pepper
sub 2 tsp coarse cracked pepper

Instructions
Step 1
Combine Chicken and Marinade and marinate for at least 20 minutes, or up to overnight.








Step 2
Add the chicken, marinade, water, and brown sugar. Bring it to a simmer, then turn heat down to medium high.

Step 3
Simmer uncovered for 1-2 hours until the sauce is thick.
Step 4
Remove chicken onto a plate and let the sauce simmer by itself until thick.
Step 5
Sear chicken in a clean pan on medium-high heat to caramelize.
Step 6
Serve over rice.
