For the Mascarpone Cream

3eggs
large, separated

100ggranulated sugar
superfine sugar dissolves best

250gmascarpone cheese

1 TbspMarsala wine
or Frangelico, dark rum, or Amaretto, optional

Instructions
Prepare the Mascarpone Cream:
Step 1
In a bowl, whisk egg yolks and sugar for 3-4 minutes until pale and creamy.

Stir in Marsala wine (if using).
Step 3
Gently fold in mascarpone until smooth. (Do not overmix.)
Step 4
If the mixture feels loose, refrigerate for 10-15 minutes.
Whip the Egg Whites:

In a separate clean bowl, whisk egg whites until stiff peaks form (about 6-8 minutes by hand, or 2-3 minutes with a stand mixer).

Gently fold the whipped egg whites into the mascarpone mixture using a spatula in an upward motion.
Assemble the Tiramisù:

Quickly dip ladyfingers into the cooled espresso (do not soak).

Arrange a layer of dipped ladyfingers in an 8x8-inch or 9x7-inch dish.

Spread half of the mascarpone cream over the ladyfingers.

Repeat with another layer of dipped ladyfingers, then spread the remaining cream.
Chill & Serve:

Cover and refrigerate for 4-6 hours (overnight is best).
