Instructions
Step 1
start by scoring the pork skin. Next rub vegetable oil into the pork skin with your hands, then add a pinch of sea salt and rub into the pork skin. Then pop your pork joint into a large silicone mould and place in your air fryer drawer. Cook for around 90 minutes at 180c, Check on the progress after 40 minutes or so.
Step 2
When there is around 10 minutes left for the pork joint to cook, then you can start to prepare your vegetables.
Step 3
Roughly cur your green beans and leeks and put into a mixing bowl. Spray your vegetables with oil and season with sea salt and freshly ground black pepper. Give them a good shake in the mixing bowl to coat them all in oil and seasoning. Then add your veggies to your air fryer drawer. Cook for 6 to 7 minutes on 180c.
Step 4
Remove your pork and leave it to rest before slicing the meat. Remove the air fried vegetables and add to a serving dish then lay the sliced pork on top. Drizzle the pork with the meat juices from the silicone mould that you cooked the pork in.
