Instructions

Step 1
Rinse the lentils and set aside
Step 2
In a pot saute onions ,garlic , celery and carrots until soft and fragrant
Step 3
Then add the lentils, vegetable broth, cumin, pepper, Italian seasoning and tomatoes and stir well until combined
Step 4
Then bring the mixture to a boil and then simmer for 20- 25 minutes or until the lentils are done
Step 5
Take off the heat and add the spinach and stir to combine enjoy
