Instructions

Step 1
In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
Step 2
Add broccoli and cauliflower florets to the pot, stirring for a few minutes.
Step 3
Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 15 minutes.
Step 4
In a blender, combine the soaked cashews with a cup of the soup mixture and blend until smooth.
Step 5
Return the blended mixture to the pot, stirring to combine. Add salt, pepper, and chopped basil.
Step 6
For the nutty crumbles, toast pine nuts and breadcrumbs in a pan until golden brown.
Step 7
Serve the soup hot, topped with nutty crumbles.
