Instructions
Step 1
Cook and shred chicken

Meanwhile, blend together tomatoes, chilli, onion and a handful of coriander. Salt to taste






Enchiladas

Preheat the oven to 190 degrees Celcius and prepare baking dish


Step 4
Fry onion in a pan until translucent. Add garlic, oregano and cumin. Cook till fragrant.





Step 5
In a large bowl combine onion mixture with shredded chicken, bit of the salsa and cilantro. Stir in cheese and salt and pepper.







Step 6
Assemble enchiladas, top with remaining salsa and cheese. Sour cream optional.




Step 7
Place in oven and bake for about 35-40 minutes
